Roasted Sweet Potatoes
- 3 Sweet Potatoes Diced
- 4 tbsp Avocado Oil
- Taco Seasoning
Black Beans
- 2 Cans Black Beans
- 2 tbsp Milk
Rice
- 2 Cups Rice
- 3.5 cups Water
Toppings
- Diced Tomatoes
- Shredded Lettuce
- Shredded Cheddar
- Avocado
- Lime Wedges
- Sour Cream
- Cilantro
Instructions
Roasted Sweet Potatoes
- Preheat Oven to 400 °F
- Peal and Dice Sweet Potatoes
- Coat in oil
- Season with Taco Seasoning
- Roast for 10 minutes & Stir Roast 10 - 15 more or until GBD (Golden Brown & Delicious)
Black Beans
- Add Drained & Rinsed Black Beans to skillet.
- Heat until warm, smash 1/2 of the beans with the back of your spoon
- Stir in milk until creamy
- Season to Taste
Rice
- Add 2 Cups of Rinsed Rice to Rice Maker
- Add water to 1 inch above Rice
- Set & Forget
Assembly
